Ingredients

  • For the Pork, Apricot, Sage and Onion Stuffing
  • 1 onion – grated
  • 1 small cox apple – grated
  • 3 teaspoons dried sage
  • 500 g Lincolnshire sausage meat
  • 50 g dried apricots – roughly chopped
  • 4 tablespoons breadcrumbs
  • oil and butter
  • seasoning
  • For the Turkey – feeds 8
  • 4.5 kg – 5kg higher-welfare turkey , at room temperature
  • 12 small sprigs of fresh rosemary , plus a few extra
  • 2 carrots , peeled and chopped
  • 1 large fennel bulb – chopped
  • 2 sticks of celery - chopped
  • 1 large orange
  • olive oil
  • 2 tablespoons plain flour
  • 1 litre chicken or vegetable stock
