Ingredients

  • 2 TBS minced garlic
  • 2 TBS minced fresh sage leaves or 2 tsp dried sage
  • 1 tsp fine sea salt
  • 1/2 tsp freshly ground black pepper
  • 2 pounds of potatoes, peeled and cut into 1 inch pieces
  • 3 TBS olive oil
  • one 3 to 4 lb bone in pork loin roast (or a 2 to 3 lb boneless one)
