Ingredients

  • 6-8 Small Potatoes, quartered (about 400g)
  • 1 Onion, peeled & sliced
  • 2 Garlic Cloves, peeled & chopped
  • 1 tsp Dried Oregano
  • 2 tbsp Olive Oil
  • Salt & Pepper
  • 1/2 Lemon, cut into wedges
  • 2 Large Tomatoes, cut into wedges
  • 2 Skinless Boneless Cod Fillets (about 200g)
  • 1 tbsp Fresh Parsley, to serve
