I had bought a chicken, ready for a Sunday roast, but when the day dawned and I went to the fridge to begin preparations, I realised, with horror in my heart, that we had no potatoes
Add the required amount of vegetables to a suitable pot and pour in the cold chicken stock, bring to a simmer for about half an hour or until done (cooking time will vary depending upon type of vegetables used)
I chose to accompany my cornbreadwith some chicken thighs and some jerk sauce from Asda, part opened and thought I'd season the chickenand cook with the sauce
Drain the potatoes and then add to the oil and garlic pan andwith the heat not too high (you are looking for golden not burned) gently roast the potatoes, turning them frequently
Stuff the chicken cavity with the remaining used lemon halves and a couple of rosemary springs. All vegetables are roasted along withchickenand its juice
Once infused, discard the apple, onion, cloves and cinnamon stick. ½ onion, skin left on. For the roast pork belly, put the pork belly in a roasting tray, skin-side up
Pour in the marinade mixture andmassage the chicken until coated well. red onion, sliced. Moist tender chicken breast strips marinated in a yogurt lime mixture using warm bold spices, grilled and drizzled with a tangy yogurt sauce wrapped in warm fluffy naan breadwith fresh vegetables
Combine the chicken, onion, garlic, cheese, egg, black pepper and salt in a medium mixing bowl. Spread the peppers, tomato, onion, and garlic in a small baking pan
Pour into an oven proof dish and top with the grated cheddar and sliced mozzarella. Cut the pepper, onion & courgette into chunks, season & spray with oil
It may not look pretty, as I didn’t put much effort into shaping it, but it tastes pretty amazing, especially when sliced, toasted and patted with butter
American food is King in our house and when I first tried Chicken Fried steak I fell in love. Next, pop some oil into a large frying pan over a medium heat and add the sliced onions along with the bay leaves and a pinch of salt and pepper
Place all the chopped apples, onion, dates, nuts and spices in a small sauce pan. For the chicken, slice the onion and place in a layer in the bottom of a baking pan
With that in mind I came up with a RoastChickenand Vegetable Pie with a Suet Crust. The Teflon coated non stick interior means they are easier to wash up than any other with no need for soaking and very little effort is needed to get them back to looking brand new
I had the idea of making the full batch of breadand using it up through the week in picnics as I was on annual leave for a week with walks and days out planned
A rich garlicky sauce which is laced with chilli, it peps up any midweek meal and works well with smokey bacon, chicken or in this case, roastedvegetables
