Ingredients

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 1 clove garlic, crushed
  • 300 g large flat mushrooms, finely chopped
  • 400 g tin brown lentils, drained and rinsed
  • a generous glug of red wine
  • 1 ½ tsp dried thyme
  • 400 g tin chopped tomatoes
  • 3 tbsp tomato puree
  • 1 vegetable stock cube
  • a good grinding of salt and pepper
