Ingredients

  • 400 g rhubarb, washed, trimmed and cut into
  • 2.5 cm pieces
  • 2 tbsp sugar
  • 150 g softened butter
  • 175 g golden caster sugar
  • 2 large eggs, beaten
  • 225 g self
  • 3 tbsp milk
  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • 40 g cold butter
  • 50 g plain flour
  • 40 g Demerara sugar
  • 1 tbsp oats
  • 2. Wash rhubarb and cook in the residue of water left clinging to it with the
  • 5 mins then drain and set aside to cool
  • 3. To make the topping, rub the chilled butter into the flour until mixture resembles breadcrumbs
  • 4. Beat the softened butter and caster sugar until pale and fluffy
