Ingredients

  • 9-12 hour
  • 10-14 hour
  • a knob of butter
  • 1 onion, peeled and finely chopped
  • ½ tsp ground allspice
  • 1 star anise
  • ¾ pint milk
  • splash of double cream
  • 100 g white breadcrumbs
  • salt and pepper
  • turkey giblets
  • 1 stick of celery, roughly chopped
  • 1 onion, peeled and quartered
  • 1 carrot, peeled and halved
  • 1 bay leaf
  • a sprig of rosemary
  • 6 peppercorns salt
  • 1 tbsp cornflour
  • a decent glug of Marsala wine (port or red wine are also good)
  • 500 ml turkey stock
  • 1 tbsp redcurrant jelly (or cranberry sauce)
