Ingredients

  • 3 Hours 15 Minutes
  • 5 slices of bacon
  • 6 (5-inch-long) beef short ribs
  • salt & pepper, to taste
  • 2 cups chopped onions
  • 3-4 cloves garlic, smashed
  • 1 ½ cups chopped carrots
  • 8- ounces baby Portobello mushrooms, quartered
  • 3 tablespoons all-purpose flour
  • 2 ½ cups chicken broth, divided
  • 2 cups red wine, divided (I used a pinot noir, but any full-bodied red wine will work)
  • 1 tablespoon tomato paste
  • 4-5 sprigs of fresh rosemary
  • 4-5 sprigs fresh thyme
