8-10 cups
of mixed vegetables ( I used a mixture of baby corn, green beans, spinach, baby potatoes, sugar snap peas,red peppers, carrots)
3-4 heaped
teaspoons of vegetarian red thai curry sauce (I used Tesco’s. Check the ingredients before buying the ready made paste as some will have fish sauce)
**pulse/blend these ingredientswith some water for a thick paste. And, mind you, you won't have a problem being friends forever with those sincerely or insincerely married heavy weight obedient ladies
This authentic Creamy ThaiRedCurrywith Chicken is a quick and easy stir-fry made with chicken, bell peppers and uses a homemade RedCurry Paste, but feel free to use store bought
Serve with rice and flavorsome soft vegan flatbread ¼ red bell pepper. Pan fry the chicken with the onion, bell pepper mixture until the chicken has turned brown
You can fiddle around with the vegetables to suit whatever you like or have in the fridge. many make their curries with fish sauce, so even if you have it with tofu it’s not vegetarian

Ingredients. 2 heaped teaspoons Thairedcurry paste. Add the coconut and the paste to a medium saucepan along with about 50mls of the milk and gently warm whilst stirring the mixture until the coconut block has melted and has formed a smooth paste. Add the rest of the milk and bring to the boil and then reduce the heat to simmer for 5 minutes

I love a good curry and Dale is a big fan too but when your busy making a curry from scratch with all the spices etc can be time consuming but I have found a nice easy way and thought I would share it
You may of course be doing #DryJanuary with year, but if not, this ThaiRed Tofu and Sweet Potato Curry would go beautifully with a Gewurztraminer or a Riesling

Set aside in the refrigerator for half an hour Heat a skillet and add 2 tbsp of vegetable oil Saute onion, bell peppers and garlic until translucent Pan fry the chicken with the onion, bell pepper mixture until the chicken has turned brown Now add the redthaicurry paste and stir it through the ingredients Add some water so the curry paste can dissolve Then you can add the coconut milk Let is simmer on medium heat for about 15 minutes

Thaicurry is usually made from a base Thai paste and could be red, green or even yellow, fried withvegetables and tofu, with coconut milk and generally served with Jasmine sticky rice
