Ingredients

  • Winter vegetable and barley soup
  • Serves 4
  • 40 g butter
  • 1 leek, washed and sliced
  • 1 stick celery, finely sliced
  • 2 carrots, peeled and diced into small pieces
  • 1 parsnip, peeled and diced (also core it if the centre is woody)
  • 1 medium potato, peeled and diced.
  • 2 bay leaves
  • half tsp dried thyme
  • 100 g pearl barley
  • 2 pt vegetable or chicken stock
  • 1 tsp tomato puree
  • 2 tbsp chopped flat-leaf parsley
  • Salt and pepper
