Ingredients

  • 2 smoked haddock fillets
  • Milk (enough to just cover the haddock fillets)
  • 2 bay leaves
  • 1 black clove
  • 2 black peppercorns
  • 2 leeks, cleaned and sliced
  • 1 tsp dried thyme
  • 400 g new potatoes, scrubbed
  • 200 g frozen sweetcorn
  • Butter
  • Parsley, chopped
  • 50 g cheddar, grated
