Recipe: Sausage & Potato Foil Packets

  • 12 ounces smoked sausage, such as andouille or kielbasa cut into 1-inch pieces
  • 11 1/2 pounds baby yukon gold potatoes, quartered
  • 18 ounces green beans, trimmed and halved
  • 11 tablespoon Cajun seasoning
  • 12 tablespoons unsalted butter, melted and cooledPreheat a gas grill to medium-high heat. Measure out four 8x8 pieces of heavy-duty aluminum foil and set aside.  
  • 1 Combine the sausages, baby potatoes, and green beans in a large mixing bowl. Add the Cajun seasoning and butter and toss to coat everything in the spicy, buttery goodness.
  • 1 Divide the potato and green bean mixture between the four pieces of foil. Fold each piece of foil up into a tight seal — fold two opposing sides together and then crimp the edges closed.
  • 1 Set the packets directly on the grill and cook for 25 minutes or until the potatoes are tender. Use caution when opening the packets, as they are quite steamy.
