Ingredients

  • 500 g ox cheeks, trimmed
  • Handful of chestnut mushrooms, quartered
  • 2 x onions, sliced
  • 1 x celery stick, chopped
  • 1 x carrot, chopped
  • 2 cloves, garlic, grated
  • 1 tbsp tomato puree
  • 2 x rosemary sprigs
  • Bunch of thyme
  • 300 mls red wine
  • 200 mls chicken stock
  • 50 g butter
  • Salt and pepper
  • Olive oil
  • 8 x King Edward potatoes, peeled
  • 50 g butter
  • 2 tbsp wholegrain mustard (optional)
