We love making homemade soup here at The Madhouse but we tend to have the same few recipes that we use every time (vegetable, Mexican black bean, French onion, lentil and bacon, chickpea and bacon

So tonight I needed to use up a huge leek from the farm shop, some pancetta cubes and half a carton of cream – with onions andpotatoes in the fridge too then soup is always a good choice

I absolutely adore this leekandpotatosoup. When your potatoes are soft, use a hand blender to whizz it all smooth, adding extra stock to get your preferred soup consistency
