  • 45 I love lemon in desserts. I also love biscuit bases. So here is a Gluten Free and Dairy Free Lemon Meringue Pie with a biscuit base... simple
  • 200 g digestive biscuits (I use the Schär Digestive Biscuits - Gluten & Dairy Free!) 75g dairy free margarine, melted (for the base) 3 egg whites (for the meringue) 120g caster sugar (for the meringue) 3 large lemons 2 large eggs (or 3 smaller ones) (for the curd) 150g caster sugar (for the curd) 100g cold dairy free margarine 2 heaped tsp corn flour
