  • 8 x free-range chicken thighs, skinned, boned and cut in half
  • 300 mls buttermilk
  • 2 tbsp smoked paprika
  • 2 tsp dried thyme
  • 2 tsp dried oregano
  • Zest and juice of a lemon
  • 150 g plain flour
  • 150 g panko breadcrumbs
  • 50 g grated parmesan cheese
  • Sea salt
  • White pepper
