Ingredients

  • 500 g of sugar
  • 8 inch baking tray
  • 2 tbsp unsalted butter
  • 80 g softened unsalted butter
  • 30 g caster sugar
  • 50 g soft light brown sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla extract
  • 75 ml of cold water into the bowl of a stand mixer and sprinkle in 2 packets of unflavoured gelatin. Leave to soften for 5 minutes
  • 50 g soft light brown sugar and
  • 215 g caster sugar with
  • 170 ml golden syrup
  • 13-15 minutes Beat in
  • 1/2 tsp vanilla extract
  • 125 g dark chocolate
  • 150 g unsalted butter cubed
  • 4 large eggs
  • 500 g caster sugar
  • 175 g plain flour
  • 1 tsp baking powder
  • 1 tsp salt
