Ingredients

  • Serves 4
  • 1 large onion (I like the sweetness a red one brings to the flavour but use whichever you have), diced
  • 1 pepper, diced
  • 2 carrots, diced
  • 2 cloves of garlic, crushed
  • 500 g extra lean minced beef
  • 1 tablespoon hot chilli powder
  • 1/2 teaspoon dried chilli flakes
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon dried basil
  • 1 400 g can baked beans
  • 1 400 g can chopped tomatoes
  • 1/2 pint beef stock
  • Dash Worcestershire sauce
  • Method
  • Spray a large saucepan with oil spray and brown the onion, garlic and chilli flakes until the onion has softened slightly.
  • Add the pepper and carrots for around 5 minutes before adding the minced beef, herbs and spices.
  • Cook until the beef is browned then add all the other ingredients. Give it a good stir, cover and simmer for approximately 30 minutes until thickened.
  • Serve with boiled rice and tortilla chips.
