  • 6-12 depending on size
  • 175 g self raising flour
  • 1 tsp baking powder
  • 3 large eggs
  • 175 g caster sugar
  • 175 g softened unsalted butter
  • the zest of 1 large lemon
  • the juice of half a large lemon
  • 1 tsp Sicilian lemon extract
  • 4-5 tbsp lemon curd.
