Ingredients

  • 5 minutes to make, plus cooling time
  • Raspberry & dark chocolate mousse domes: makes 8

  • 150 g raspberries
  • 1 large egg egg, at room temperature
  • 20 g caster sugar
  • 1 sheet gelatine, soaked in cold water for 5 minutes and squeezed dry
  • 1 tablespoon Framboise liqueur
  • 30 ml semi-skimmed milk (or double cream)
  • 1 tablespoon dried raspberry powder
  • 180 g best quality dark chocolate, at least 70% solids
  • 1.5 sheets gelatine, soaked in cold water for 5 minutes and squeezed dry
  • 180 ml semi-skimmed milk
  • 220 ml double cream, whipped just to the soft peak stage
  • 100 ml semi-skimmed milk (or double cream)
  • 100 ml water
  • 90 g caster sugar
  • 40 g cocoa powder
  • 2 gelatine leaves, soaked in cold water for 5 minutes
  • 20 g butter
  • 15 g water
  • 40 g icing sugar
  • 15 g plain flour
  • 7 g cocoa powder
