Ingredients

  • You will need
  • 190 g plain flour (plus 1tbsp if you're using fruit)
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 230 g plain yogurt
  • 215 g golden caster sugar (plus 1tbsp for your glaze)
  • 3 eggs 2tsp grated lemon zest (2 lemons)
  • 1/2 tsp pure vanilla extract
  • 120 ml vegetable oil
  • 255 g summer fruits – I used raspberries and blueberries
  • 80 ml lemon juice (fresh)
  • Method
  • 1 ). Preheat your oven to 180C and line your loaf tin with baking paper.
