  • Rabbit Stew with Pancetta and Tarragon
  • Serves 4
  • Ingredients
  • 1 tsp olive oil (or your preferred cooking fat)
  • 80 g smoked pancetta or bacon (diced or cubed)
  • 1 white/yellow onion
  • 2 garlic cloves, whole and unpeeled
  • 450 ml chicken stock or broth
  • half teaspoon dried tarragon
  • 3 large carrots, peeled and trimmed and cut into large chunks
  • 1 whole rabbit (mine was from Farmer's Choice), defrosted, if frozen
