Quick Sweet Chilli Prawns and Noodles

  • 2 tablespoons of sweet chilli sauce (3 syns)
  • 14 tablespoons of light soy sauce
  • 1200 g (7oz) of large frozen raw prawns/shrimp (defrosted)
  • 1120 g of egg noodles
  • 11 bag (340g/12oz) of shredded veg or use a few cups of frozen stir fry vegetables
  • 12 spring onion, finely sliced
  • 1 black pepper
  • 1 spray oilAdd the noodles to a large saucepan of boiling hot water, simmer for 2 mins to soften and then drain, rinse with cold water and set aside.
  • 1 Spray a Wok with some spray oil
  • 1 Add the vegetables and stir fry for approx 5 mins
  • 1 Add the prawns and the sweet chilli sauce and soy sauce and continue to stir fry until shrimp is cooked through..
  • 1 Add the noodles and mix thoroughly to evenly coat, serve between two bowls, season with black pepper and top with sliced spring onion
  • 1 Enjoy!!
