Ingredients

  • 1/2 whole pork tenderloin
  • drizzle of olive oil
  • 1 garlic clove
  • 1 thyme sprig
  • knob of butter
  • 2 heads endive
  • 1 cup orange juice
  • 1 tablespoon maple syrup
  • 1/2 cup single cream
  • 3 minutes Turn over and cook until barely pink in the center,
  • 2 minutes Transfer to plate of garlic and thyme
  • 2 minutes Turn over and cook
  • 1 minute more
  • 5 minutes Stir in the cream
  • 1 minute Divide pork and endive among
  • 2 serving bowls or plates
