Ingredients

  • 2 pork chops
  • knob of butter
  • 2 endives, cut into quarters
  • 8 baby parsnips, tops and tails trimmed
  • 15 g butter
  • 1 tbsp runny honey
  • 60 ml olive oil
  • sprig of thyme
  • seasoning
  • 8-10 brown mushrooms, sliced
  • 1 small red onion, peeled and finely chopped
  • 300 ml chicken or pork stock
  • 20 g butter
  • drizzle of olive oil for frying
