Ingredients

  • 1.2 kilos of pork belly
  • 3/4 bottle of white wine
  • 100 ml of olive oil
  • few sprigs of rosemary, finely chopped
  • 1 tbs of black pepper corns
  • 1 tsp Maldon sea salt
  • 1 large Spanish onion, quartered
  • 1 bulb of garlic, unpeeled
  • 1/2 litre of chicken stock
