  • 350 g baking liquid (such as Stork Baking Liquid or Flora Cuisine), plus a little for greasing
  • 150 g carrot
  • 400 wholemeal self-raising flour
  • 1 tsp vanilla extract
  • 1 tsp mixed spice
  • 280 g full fat cream cheese
  • 500 g icing sugar
  • 1 tsp vanilla extract
  • 75 g walnuts
  • 12 ″ x 9″ greaseproof baking tray. I use this Mary Berry with Lakeland tray (affiliate)
