My fruit trees are groaning with the weight of the applesandpears this year. This recipe is based on my trusted applecake recipe but with added almondsand a sticky glaze which gives them extra flavour
All of that rolling and stamping out dough makes me want to break out in a not very festive sweat. But plenty of people do, so these small fruity hand pies are at absolutely every gathering at this time of year
Mix everything apart from the apples, blueberries andalmonds together well. And I also added vanilla because I adore the mix of almondand vanilla together
Appleandalmondcake - makes one cake. Peel and core the apples cutting into rough chunks. The basic mix is based on a victoria sponge (so not sugar free) but by adding apples into the mix, this pads out the cake meaning you get something which feels special without needing layers of sugary icing or jam so still a treat but perhaps a less guilty one
appleandalmond passover cake. - pour the eggs, ground almondsand sugar into a food processor or large bowl, add the cooled applesand blitz until well combined
Nigella has a recipe in Feast for a damp apple & almondcake, one of her fantastically easy, whizz it all up cakes, which has no butter, and no flour in it, so possibly a good one for those with gluten issues

*PearandApple Spice Cake*. The other day I had some pears that I wanted to use as well, and so I used half pearsand half apples with the most delightful results
The resulting cake sets sweet plums andapple pieces against almond tones, a pairing (tripling. I made this on a whim, drawing on my almond-semolina-apple-oat slice recipe for inspiration, and being guided by the plums in my fruit bowl and the flours in my fridge
The original recipe was for a mango upside down cake, however I make a pretty mean version myself but this recipe was different enough and as I had some pears that had become very ripe after buying far too much fruit after a small spending spree in Aldi’s super six – honestly forget I only buy for one sometimes, and knowing from a previous experiment with some lush almond extract, I knew how well the flavours marry together so well, and thus the cake was born
The recipe is inspired by one of Nigella’s (Apple & AlmondCake) and is unbelievably moist and buttery (especially considering the complete lack of butter in the recipe…)

Easy to make. We used gluten free flour and it worked well. Very tasty, most cake.
