  • 400 g brioche bread, sliced
  • 30 g unsalted butter, room temperature (plus extra for greasing)
  • 3 pears, cored and thinly sliced
  • 100 g dark chocolate, coarsely chopped
  • 2 free-range eggs
  • 350 ml whole milk
  • 50 ml double cream
  • 25 g granulated sugar
  • 3 tbsp brown sugar, for glazing
