Ingredients for Lets Do Lunch With Ginoand Mel Pasta Penne with creamybaconsauce. A simple yet delicious pasta dish, made usingbacon, cream cheese and a good squeeze of lemon
Throw your pastainto the sauceand add the cooked chicken andbacon. In the meantime cook your pastaand when ready, drain but keep back a small cup of the cooking water in case you need it to thin down the sauce
Transfer this pasta to the serving bowl andsprinkle grated parmesan cheese on top and serve. Now, heat it for a minuteand stir well then add cheese spread to it and stir until you get a smooth sauce
4 ripe vine tomatoes, peeled and chopped. 11 onion, finely chopped. 11 baby aubergine (egg plant), chopped. 11 courgette (zucchini) chopped. 1sprinkling of Italian herbs (I used dried). 1Salt and Pepper. 1fresh chopped basil or Italian parsleyPlace a non stick frying pan over a medium heat, spray with some spray oil. 1Add, the onion, garlic, aubergineand courgette and cook until softened. Approx 5 mins. 1Add the tomatoes,tomato paste, passata, italian herbs and the stock. 1Bring to the boil, reduce heat, then cover and simmer for 40 mins. 1Roughly blend with a hand (immersion) blender. 1Add the cream cheese and whisk until sauce becomes thick andcreamy. 1Season with salt and pepper as needed, and serve with cooked pasta, or spiralled veggies or even chicken
Add the olive oil and water as needed to keep the sauce from getting too thick. I try not to fret about his obsession to stick with Indian food, and keep my love to myself
In fact, it’s almost too good to be true – you can whip this sauce up in the time it takes to cook your pasta, it’s healthy and other than an avocado and fresh basil, you’ve probably got all the ingredientslying around already
Once the sauce is to your desired thickness, taste and adjust seasonings as needed. Bring a large pot of water to a boil and cook pastaaccording to package instructions
