Ingredients

  • For the Oxtail
  • 1.6 kg Oxtail
  • 2 x Large onions, sliced
  • 2 x Carrots, peeled and sliced
  • 200 g Chestnut mushrooms
  • 1 x Can of Guinness
  • 1 x Can of water (just fill up the empty Guinness can)
  • 4 x Garlic cloves, roughly chopped
  • 1 x Bay leaf
  • 1 x Thyme sprig
  • 1 x Rosemary sprig
  • 1 x Star anise
  • 1 x Beef stock cube
  • 2 tbsp Tomato puree
  • 1 tbsp Worcestershire sauce (or Hendersons if you're Yorkshire)
  • 1 tbsp Balsamic vinegar

  • For the Suet Pastry
  • 140 g Atora suet
  • 280 g Self raising flour
  • 5 g Salt
  • 160 ml Cold water
