Ingredients

  • 1.5- pound bag Little Potato Company Boomer Gold potatoes
  • 13 Tablespoons extra-virgin olive oil
  • 11 teaspoon salt
  • 13 Tablespoons parsley flakesPlace potatoes in a large bowl.
  • 1 Add olive oil, salt, and parsley to potatoes. Toss to coat.
  • 1 Spread potatoes out on a lipped baking sheet.
  • 1 Bake at 400 degrees for 30 minutes, stirring once during cooking.
