  • 2 lamb shanks (preferably from hind legs)
  • 2 large onions, peeled and finely diced
  • 2 fat garlic cloves, peeled and finely diced
  • 2 large carrots, peeled and diced
  • 2 sticks celery, finely diced
  • 2 tsp sugar
  • 2 x400g (14oz) cans of cannellini beans, drained and rinsed
  • Juice of 1/2 lemon
  • 2 bay leaves
  • zest of 1 lemon
  • 2 garlic cloves, finely diced
