And yep, that’s pretty good value considering it’s all fresh, but even so… Making this big pot of pasta will work out lot cheaper, so long as you buy an inexpensive mascarpone
I always have a few packets of dried tortellini tucked away for impromptu meals, and my favourites are the vegetarian versions you can get from one of the best and well-know “budget shops” – it’s an aubergine andtomato filled tortellini which is very easy to “dress up” in a “designer sauce” or a quick dressing for a pasta salad

Portion out the pastaand top with a small spoon of quark and a sprinkling of Cajun seasoning. To make this dish even more creamy, I stole a technique from my carbonara recipe, and mixed an egg with some quark and stirred it in when the heat was turned off at the very end of the recipe
Of course you could serve with mashed potato or rice, but we ate it on its own and it was perfect (had to go to the kitchen to get some spoons so we could drink all the lovely juices)

In a frying pan (sprayed with frylight) gry the garlic until soft, add the tinned tomatoes, the cherry tomatoes (halved), the stock and the sugar (also the herbs, salt and pepper if you wish)
1pinch of salt and black pepper. 1250g/9oz of boneless skinless chicken thigh, sliced thinly. 5oz of uncooked penne pasta (or other paste of choice). 11 onion, quartered and sliced thinly. 11/2 cup (120ml) of passata (or crushed tomatoes. 11 tbs of tomato paste. 1spray oilSpray a frying pan over a medium high heat with spray oil. 1Add the chicken and cajun spice and fry till lightly browned, remove and set aside. 1Add the onion and fry until softened (adding in a little of the stock to deglaze the pan). 1Add the garlic and fry just to infuse flavour. 1Add the peppers, zucchini, passata, tomato paste, Worcestershire sauce and tabasco and stir to combine. 1Add back in the chicken, along with the pastaand stock, bring to a boil, cover and simmer for 12 mins. 1Stir in the shrimp and cream cheese, until cream cheese is just melted, add lid and simmer for approx 3 mins just to ensure shrimp is cooked through. 1Sprinkle with chopped spring onion
