Ingredients

  • 1.5 tbs of paprika
  • 11 tsp of garlic powder
  • 11 tsp of onion powder
  • 11/2 tsp of oregano
  • 11/2 tsp of thyme
  • 11/2 tsp of cayenne pepper
  • 1 pinch of salt and black pepper
  • 1200 g/7oz of raw shrimp
  • 1250 g/9oz of boneless skinless chicken thigh, sliced thinly
  • 1300 g/10.5oz of uncooked penne pasta (or other paste of choice)
  • 11 onion, quartered and sliced thinly
  • 12 cloves of garlic, crushed
  • 11 red bell pepper, diced
  • 11 green bell pepper, diced
  • 11 medium zucchini (courgette), diced
  • 11/2 cup (120ml) of passata (or crushed tomatoes
  • 11 tbs of tomato paste
  • 14 cups (960ml) of stock
  • 11 tbs of worcestershire sauce
  • 1 few splashes of tabasco sauce
  • 14 tbs of low fat cream cheese (4 syns)
  • 12-3 chopped spring onions
  • 1 spray oilSpray a frying pan over a medium high heat with spray oil
  • 1 Add the chicken and cajun spice and fry till lightly browned, remove and set aside.
  • 1 Add the onion and fry until softened (adding in a little of the stock to deglaze the pan)
  • 1 Add the garlic and fry just to infuse flavour.
  • 1 Add the peppers, zucchini, passata, tomato paste, Worcestershire sauce and tabasco and stir to combine.
  • 1 Add back in the chicken, along with the pasta and stock, bring to a boil, cover and simmer for 12 mins
  • 1 Stir in the shrimp and cream cheese, until cream cheese is just melted, add lid and simmer for approx 3 mins just to ensure shrimp is cooked through.
  • 1 Sprinkle with chopped spring onion.
  • 1 Enjoy!!
