Squeeze the lime and prepare the mango by peeling and cutting into even chunks. Place the chopped mango, lime juice and honey in a medium saucepan and simmer for 30 mins. Once cooled transfer to a bowl, cover with cling film and chill for at least 6 hours but overnight is best. Add the yoghurt to the mango mixture and transfer to your ice cream maker and mix according to instructions (ours is 30 minutes) then transfer into tubs and place in freezer. 2 Large Ripe Mangoes
