Before my health kick it was a regular Monday dinner recipe using leftover roast chicken,lots of margarine or butter to fry so I wanted to recreate that meal only healthily
Add the sauce to the chicken and cashew nuts. Marinate the chicken in the garlic and ginger paste for 15 minutes and add the yoghurt mixed with chilli powder and leave for a minimum of five hours or preferably overnight. Place the chicken under a medium-hot grill for 12 minutes, do not turn. Add the fenugreek leaves, double cream, butter and a pinch of salt and simmer for 15-20 minutes. Add the cooked chicken and fry for 3-4 minutes. 8 Free range chicken thighs. 200-250 gam Butter (unsalted)
Serve the butterchicken with the chapatis. Brush the cooked chapatis with the melted butter. Put the chicken breasts in a bowl and pour over the marinade, mixing to coat

This slow cooked chicken and butternut squash curry couldn’t be much simpler. When the slow cooker is done, use two forks to pull apart the chicken breasts and squash some of the butternut squash into the sauce
