Ingredients

  • 2 of the wonderful series Back in Time For Dinner with the endearingly ineffective can
  • 1 free-range chicken, about 1.5kg
  • a fresh bayleaf
  • a few black peppercorns and cloves
  • 1 tsp salt
  • 1 small onion, roughly sliced
  • 3 tbsp apricot conserve
  • 1 – 2 tbsp good curry paste
  • 1 tsp sun dried tomato paste
  • juice of 1/2 lemon 150ml good quality mayonnaise (home made if possible)
  • 200 ml natural yoghurt (I like Yeo Valley for its creamy texture
