Ingredients

  • 1.3 kg shoulder or haunch muntjac venison
  • 4-5 tbsp plain flour
  • 300-350 ml red wine
  • 1 medium onion, sliced
  • 3 tbsp brandy
  • 3 tbsp olive oil
  • 1 sprig of rosemary
  • 1 bay leaf
  • 2 tbsp olive oil
  • 225 g streaky bacon, cut into 2cm cubes
  • 2 large onions, chopped
  • 1 large carrot, diced
  • 1 large clove garlic, crushed
  • 450 ml beef stock
  • 1 sprig of rosemary
  • 1 bay leaf
  • lemon juice, to taste (optional)
