Ingredients

  • The tin
  • 125 g plain flour
  • 300 g caster sugar
  • 360 ml egg whites, at room temperature (or the whites of 10-12 large eggs)
  • 1 teaspoon cream of tartar
  • ½ teaspoon salt
  • 25 g best quality dark chocolate, at least 70% solids, grated coarsely
  • 200 ml double cream
  • 150 g best quality dark chocolate, at least 70% solids
  • 1 teaspoon coffee granules dissolved in a little hot water
  • 160 g granulated sugar
  • 35 ml water
  • 50 g unsalted butter, roughly chopped
  • 75 ml double cream
  • 1 teaspoon fine sea salt
