  • 1 medium pineapple - peeled, de-eyed and cut into small chunks
  • 1 inch of thick ginger - peeled and diced
  • 1 medium apple - cored and diced
  • 1 stick of lemongrass - snapped in three places but kept together
  • 3 tablespoons demerara sugar
  • a dash of cinnamon
  • 2 eggs
  • 6 oz self raising flour
