Ingredients

  • The pastry
  • 22 - 24 mini tart
  • 100 g rice flour
  • 50 g buckwheat flour
  • 2 tbsp fine cornmeal
  • 1/2 tsp xanthan gum
  • 75 g butter, cold and cubed, plus extra for greasing
  • 2 tbsp coconut sugar, or caster sugar
  • 1 egg yolk
  • cold water
  • whichever flavour of jam you like, I used raspberry
  • powdered sugar for dusting, optional.
