One of my all time favorite dishes is the roastedvegetableswithchicken. It is very easy to make and a perfect healthy meal which can be served as it is or with fish, chicken or meat, or as I love to serve
I have mentioned before how much I love chorizo, we had some left over last week, along with a few leftovers hanging around in the veggie drawer so I decided to add a tray bake to our weekly menu, it used up all of the veg that was going to be thrown out and all it cost me was the price of some diced chicken and an aubergine

Once ready sprinkle with freshly chopped Italian parsley. 4 chicken thighs (skinned, boneless and all fat removed). 1Place vegetables in a oven proof dish, season with salt and black pepper and spray over the top with some olive oil spray and add the balsamic vinegar and toss to coat, place in the oven and bake for about 45 mins, till softened. 1For the chicken, season with salt and then season well with some black pepper, add red pepper flakes if using and place on a baking tray lined with parchment and spray over the top with olive oil spray. Bake for approx 30 mins, until lightly golden on top and cooked through, you can add them into oven with the vegetables after approx 15 mins. 1Serve with the roastedvegetables and your choice of sides
Serve the curry in a large bowl with the chicken on top. Our little son was ill this weekend and me and the Mrs needed something substantial, nourishing and life affirming in order that we might cope with serious sleep deprivation, fraying nerves and malnutrition

Oven roastedMediterraneanvegetables. Supermarket pack of mixed Mediterraneanvegetables. While I absolutely love cod and other white fish served that way on occasion as much as anyone, I've got to say that I much prefer it cooked and served in a Southern European/Mediterranean style
