Ingredients

  • 6 as a Main Meal
  • 9 g fat
  • 2 portions fruit
  • and vegetables
  • 2 tsp olive oil
  • 1 large onion
  • 2 cloves garlic
  • 2 large aubergines
  • 1 large sweet potato
  • 600 g meat free mince
  • 1 can chopped tomatoes
  • 2 peppers (mixed colours)
  • 6 medium tomatoes
  • Red wine (optional)
  • 1 tsp cinnamon
  • 1 tsp oregano
  • 1 bay leaf
  • Pepper, to taste
  • Pinch of salt
  • 500 ml skimmed milk
  • 60 g low fat spread
  • 50 g very strong mature cheese
  • 2 tbsp corn flour
