I used the creaming method of making the sponge batter which gave yet even more lightness but feel free to follow MaryBerry's all in one method and you will still get an oh so soft spongecake, it will be hard to resist taking an extra slice
Hot Chocolate Fudge Cake with Vanilla Ice Cream, photo by JMorton. If the cake has risen a little to high then use a serrated knife to even off the top, now sandwich the two cakes together with the butter icing and cover the sides and the top of the cake with more butter icing
Everyone loves chocolatespongecake right. To finish you can dust with icing or if you want a really chocolateycake you could make more chocolate ganache and completely cover the cake
I adore Mary Berry, the absolute Queen of Baking here in the UK. Here is one of our favourites…I put the chocolate icing onto the cakes whilst they were still warm and this way it melted into a rich chocolate sauce with an ultimate moist cake centre…ummm chocolate heaven

Iced Ginger Cake. I used Wilton cake release from Lakeland in my unlined mold. Either add the chopped ginger now and pour over the cooled cake or drizzle down the sides of the ring cake and decorate as I have done
