I used the creaming method of making the sponge batter which gave yet even more lightness but feel free to follow MaryBerry's all in one method and you will still get an oh so soft spongecake, it will be hard to resist taking an extra slice
For this week's entry I asked Becca to produce a watercolour of my favourite VictoriaSponge recipe. one of the halves of your sponge, top it with jam and sandwich the second half on
Iced Ginger Cake. I used Wilton cake release from Lakeland in my unlined mold. Either add the chopped ginger now and pour over the cooled cake or drizzle down the sides of the ring cake and decorate as I have done

Baking has to be one of my favourite things to do where cooking is concerned but I have never managed to master a great looking VictoriaSpongecake, still haven't, but what I have managed to do is create a great tasting one
