An all in one method in a traybake form requires only the minimum of mixing to combine ingredients then a swirling sheet of icing and a flourishing finish of chocolate
Here is one of our favourites…I put the chocolateicing onto the cakes whilst they were still warm and this way it melted into a richchocolate sauce with an ultimate moist cake centre…ummm chocolate heaven
It’s a rich chocolaty moist brownie-like cake and although it is a cake, it’s the type of cake you could serve for dessert with some cream on the side, which we did, or some custard, which we did the next day, or some ice cream, which we eventually managed with our final slice
Pour the melted chocolate into the bowl with the remainder of the cheese mixture. Well actually, I can’t turn down a delicious fruit cheesecake or vanilla cheesecake, especially not if it has a traditional biscuit base and some berries in some form or another with it
Dust withicing sugar generously. Whilst there is nothing wrong with the chocolate logs of yesteryear, it takes very little effort to transform your normal looking chocolate roulade into a Christmassey snow covered show stopper of a Christmas log
Allow to soften slightly before serving, decorate with strawberries, raspberries, icing sugar etc. Spread the mixture into the prepared tin and level off the top with the back of a spoon, cover with clingfilm and transfer to the freezer for a minimum of four hours to freeze

Sandwich with the other cake and spread (or pipe) the remaining icing on top, using the tip of a rounded palette knife to create a swirled effect from the centre to the edge of the cake
Strawberry ice cream should be enjoyed all the time. I'm so glad this was the recipe I started with for my first foray into real ice cream--it was kind of insanely easy
Mary says if you've time to brush the top of the cake with some apricot jam as it gives the cake a lovely flavour and stops the cake crumbs from getting into the icing
They do a granulated sugar replacement, a brown sugar replacement and an icing sugar replacement. And with more on the way there’s sure to be something for everyone
