Ingredients

  • 225 g White Scone Mix
  • 175 g Butter
  • 150 g Caster Sugar
  • 3 Large Eggs
  • 1 Lemon (grated rind)
  • 1 Pre heated oven to 180 degrees C/Gas 4
  • 2 Cream butter and sugar together until fluffy
  • 3 Add an egg and some flour gradually and mix until all the flour and eggs are used
  • 4 Mix the lemon rind and stir through
  • 5 Spoon batter into the tin and smooth top with the back of a spoon
