Ingredients

  • 1.4 kg potatoes
  • 2 free range egg yolks
  • 100 g butter
  • 75 ml milk
  • 300 ml of the poaching milk
  • 200 ml vegetable stock
  • 25 g butter
  • 25 g plain flour
  • 50 g frozen peas
  • About
  • fresh dill chopped
  • 500 ml milk
  • 1 bay leaf
  • 200 g fresh
  • cod fillet
  • 200 g fresh
  • 200 g smoked haddock
  • 2. To poach the fish place the milk and bay leaf in a deep sided frying pan and bring to a simmer, place the cod and haddock in the poaching liquor and simmer for about 4
  • 3. To make the bechamel place the butter in a saucepan and melt on a medium heat, then add the flour and beat together with a wooden spoon, cook on low for a few minutes to cook out the flour
  • 5. Pre heat your oven to gas mark
