Low Syn Best Ever Chicken Korma

Ingredients

  • 1 kg/2.25lbs of chicken breast, cut in chunks
  • 12 medium onions, finely chopped
  • 13 cloves of garlic, crushed
  • 12 tsp of freshly grated ginger
  • 12 tsp of cumin
  • 12 tsp of coriander
  • 11 tsp of garam masala
  • 1½ tsp of turmeric
  • 1¼ tsp of chilli powder
  • 1¼ cup/60ml of passata
  • 12 cups/480ml of chicken stock
  • 1½ cup of fat free plain yoghurt
  • 1½ tsp of coconut extract
  • 130 g/1oz of creamed coconut - 10 syns
  • 11 tbs of cornstarch - 1.5 syns
  • 1½ tbs of sukrin (or other sweetener of choice)
  • 1 salt and black pepper
  • 1 spray oil
  • 1 freshly chopped corianderSpray a frying pan with spray oil, over a medium high heat. Add the onion, ginger and garlic and fry for approx 5 mins till golden.
  • 1 Stir in the cumin, coriander, garam masala, turmeric and chilli powder and to coat
  • 1 Add the passata and stock, then bring to a boil.
  • 1 Reduce heat and simmer for approx 10 mins till onions have fully softened.
  • 1 Pour into a blender and blend till smooth, set aside.
  • 1 Spray the same pan with spray oil.
  • 1 Add the chicken breast and fry till golden on all sides.
  • 1 Pour in the sauce from the blender.
  • 1 Let it simmer until chicken is cooked through (about 8 mins)
  • 1 Then add in the creamed coconut, coconut extract, yoghurt and sukrin.
  • 1 Mix the cornstarch with a little cold water to make a slurry.
  • 1 Pour this into the pan and keep stirring till sauce is nice and smooth and creamy.
  • 1 Season as needed with salt and black pepper and sprinkle with fresh chopped coriander.
  • 1 Serve with your choice of sides.
